  1. Rinse the pigeon pea (toor dal) under running water.
  2. In a pressure cooker, add the rinsed dal, water, chopped onion, tomato, ginger, garlic, green chili, turmeric powder, red chili powder, coriander powder, cumin powder, garam masala, and salt.
  3. Close the pressure cooker and cook on medium heat for 4-5 whistles.
  4. Once the pressure releases naturally, open the cooker and give the dal a good stir.
  5. In a small pan, heat ghee and add asafoetida, mustard seeds, cumin seeds, and curry leaves. Let them splutter.
  6. Pour this tempering over the cooked dal and mix well.
  7. Garnish with fresh coriander leaves and lemon juice.
  8. Serve hot with rice or roti.
