Blueberries are often referred to as a ‘superfood’ due to their high antioxidant content and potential health benefits.

Preheat the oven to 375°F (190°C).

In a mixing bowl, combine the flour, sugar, baking powder, and salt.

Cut the cold butter into small pieces and add them to the dry ingredients. Use a pastry cutter or your hands to cut the butter into the flour mixture until it resembles coarse crumbs.

In a separate bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and stir until just combined.

Gently fold in the fresh blueberries.

Scoop spoonfuls of the batter onto a baking sheet lined with parchment paper.

Bake for 18-20 minutes or until the edges are golden brown.

While the bites are cooling, make the glaze by whisking together the powdered sugar and lemon juice.

Drizzle the glaze over the cooled blueberry bites.
