  2. In a small bowl, whisk together tahini, soy sauce, garlic, ginger, sesame oil, lime juice, maple syrup, crushed red pepper flakes, salt, and black pepper.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat. Add the mixed vegetables and stir-fry for 3-4 minutes until tender-crisp.
  4. Add the cooked rice noodles to the skillet and pour the tahini sauce over them. Toss everything together until well coated.
  5. Cook for an additional 2-3 minutes, stirring constantly, until the noodles are heated through.
  6. Remove from heat and garnish with chopped cilantro and chopped peanuts (optional).
