  2. Add the Panch Phoron (cumin seeds, fennel seeds, mustard seeds, nigella seeds, fenugreek seeds) and let them splutter.
  3. Add chopped onion, garlic, ginger, and green chilies. Sauté until onions turn golden brown.
  4. Add chopped tomatoes and cook until they become soft.
  5. Add sliced potatoes, salt, and turmeric powder. Mix well.
  6. Add water, cover the pan, and cook until the potatoes are tender.
  7. Garnish with coriander leaves.
  8. Serve hot with rice or roti.
