Souped up Lentils
Lentils are one of the oldest cultivated crops and have been consumed for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 55 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 13.

Rinse lentils under cold water and drain.

In a large pot, heat olive oil over medium heat.

Add onion, garlic, carrots, and celery. Sauté until vegetables are tender.

Add cumin, paprika, salt, and black pepper. Stir well.

Add lentils and vegetable broth. Bring to a boil.

Reduce heat to low and simmer for 30 minutes, or until lentils are tender.

Remove from heat and let it rest for 10 minutes.

Stir in lemon juice and fresh parsley.

Serve hot and enjoy!
