Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.

Add sliced carrots and cook for a few minutes.

Pour in vegetable broth and bring to a boil. Reduce heat and simmer until carrots are tender.

Remove from heat and let it cool slightly. Use an immersion blender or a regular blender to puree the soup until smooth.
