  1. Rinse the red lentils under cold water and drain.
  2. In a large pot, heat some oil over medium heat.
  3. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
  4. Add the carrots and celery. Cook for a few minutes.
  5. Add the spices (turmeric, cumin, coriander) and cook for another minute.
  6. Add the red lentils and vegetable broth. Bring to a boil.
  7. Reduce heat, cover, and simmer for about 20 minutes or until lentils are tender.
  8. Using an immersion blender, blend the soup until smooth.
  9. Stir in the coconut milk and lime juice. Season with salt and black pepper.
  10. Simmer for another 5 minutes.
  11. Serve hot, garnished with fresh cilantro.
