Sweet potatoes are a great source of vitamins A and C, and they add a natural sweetness to the burger.

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potatoes. Cook them in boiling water until tender, then drain and mash.
  3. Cook the quinoa and red lentils according to package instructions.
  4. In a pan, heat 1 tablespoon of olive oil and sauté the onion and garlic until translucent.
  5. In a large bowl, combine the mashed sweet potatoes, cooked quinoa and red lentils, sautéed onion and garlic, spinach, ground cumin, paprika, salt, and black pepper. Mix well.
  6. Form the mixture into patties and coat them with breadcrumbs.
  7. Heat the remaining olive oil in a pan over medium heat. Fry the patties until golden brown on both sides.
  8. Transfer the patties to a baking sheet and bake in the preheated oven for 10 minutes.
  9. Toast the hamburger buns.
  10. Assemble the burgers by placing a patty on each bun, and topping with lettuce, tomato, and avocado.
  11. Serve and enjoy!
