Vegan Ricotta and Sausage Stuffed Shells
Stuffed shells, also known as conchiglioni, are a popular Italian pasta dish that is traditionally filled with a ricotta and meat mixture. This vegan version replaces the ricotta and meat with vegan alternatives, making it suitable for those following a plant-based diet.

Cook the jumbo pasta shells according to package instructions. Drain and set aside.

In a skillet, cook the vegan sausage crumbles until browned. Set aside.

In a separate skillet, sauté the spinach until wilted. Set aside.

In a bowl, combine the vegan ricotta cheese, cooked vegan sausage crumbles, sautéed spinach, garlic powder, dried oregano, dried basil, salt, black pepper, and nutritional yeast.

Preheat the oven to 375°F (190°C).

Spread a thin layer of tomato sauce on the bottom of a baking dish.

Stuff each cooked jumbo pasta shell with the ricotta and sausage mixture and place them in the baking dish.

Pour the remaining tomato sauce over the stuffed shells.

Cover the baking dish with foil and bake for 20 minutes.

Remove the foil and bake for an additional 10 minutes, or until the sauce is bubbly and the shells are heated through.

Let the stuffed shells rest for 10 minutes before serving.
