  2. Slice the green tomatoes into 1/4-inch thick slices.
  3. In a shallow dish, combine the breadcrumbs, Parmesan cheese, salt, black pepper, paprika, garlic powder, and cayenne pepper.
  4. In another shallow dish, whisk together the eggs and milk.
  5. Dredge each tomato slice in flour, dip it into the egg mixture, and then coat it with the breadcrumb mixture.
  6. Place the coated tomato slices on the prepared baking sheet.
  7. Drizzle olive oil over the tomato slices.
  8. Bake in the preheated oven for 15 minutes, then flip the slices and bake for an additional 5 minutes until golden and crispy.
  9. Remove from the oven and let rest for 5 minutes before serving.
