Rinse the lentils and set aside.

Heat olive oil in a large pot over medium heat.

Add chopped onion, minced garlic, and sliced carrot. Cook until onion is translucent.

Add diced tomato, bay leaves, cumin, paprika, salt, and black pepper. Cook for 2 minutes.

Add lentils and vegetable broth. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for 30 minutes.

Add shredded cabbage and cook for an additional 10 minutes.

Remove from heat and let it rest for 10 minutes.

Serve hot, garnished with fresh parsley.
