Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large bowl, combine the okara, rice flour, cornstarch, baking powder, cinnamon, and salt.

In a separate bowl, mix together the applesauce, maple syrup, and vanilla extract.

Gradually add the wet ingredients to the dry ingredients, stirring until well combined.

Fold in the chopped apple, walnuts, and raisins.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
