Preheat the oven to 350°F (175°C).

In a bowl, mix the graham cracker crumbs and melted vegan butter until well combined.

Press the mixture into the bottom of a greased 9-inch springform pan to form the crust.

In a blender, blend the cashews, coconut cream, lemon juice, maple syrup, and vanilla extract until smooth.

Pour the mixture over the crust in the springform pan.

Bake for 40 minutes or until the edges are set and the center is slightly jiggly.

Remove from the oven and let it cool in the pan for 10 minutes.

Transfer to a wire rack and let it cool completely.

Refrigerate for at least 2 hours or overnight.
