In a microwave-safe bowl, combine the peanut butter, honey, and vanilla extract. Heat in the microwave for 30 seconds or until melted.

In a large mixing bowl, combine the rolled oats, rice cereal, mini chocolate chips, and chopped peanuts.

Pour the melted peanut butter mixture over the dry ingredients and mix well until everything is evenly coated.

Press the mixture into a lined baking dish and refrigerate for at least 2 hours or until firm.

Once firm, cut into bars and serve.
