Date squares, also known as matrimonial squares, are a popular dessert in Canada and Scotland.

  1. Preheat the oven to 350°F (175°C). Grease a baking dish.
  2. In a saucepan, combine dates and water. Bring to a boil and simmer for 5 minutes until dates are soft. Remove from heat and let cool.
  3. In a mixing bowl, combine oats, whole wheat flour, brown sugar, baking soda, and salt. Mix well.
  4. Add coconut oil to the dry mixture and mix until crumbly.
  5. Press half of the oat mixture into the bottom of the greased baking dish.
  6. Spread the cooled date mixture evenly over the oat layer.
  7. Sprinkle the remaining oat mixture on top of the date layer.
  8. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  9. Remove from the oven and let cool for 30 minutes before cutting into squares.
  10. Serve and enjoy!
