Heat olive oil in a large skillet over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the skillet and set aside.

In the same skillet, sauté the onion and garlic until softened. Add the ground cumin, coriander, ginger, and cinnamon stick, and cook for another minute.

Return the chicken thighs to the skillet and add the preserved lemon, chicken broth, and green olives. Bring to a simmer, cover, and cook for 25-30 minutes, or until the chicken is cooked through.

Remove the cinnamon stick and stir in the fresh cilantro. Season with salt and black pepper to taste.

Let the dish rest for 5 minutes before serving. Serve with couscous or rice.
