  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the green bell peppers and remove the seeds.
  3. In a saucepan, cook quinoa according to package instructions.
  4. In a large skillet, sauté onion and garlic until translucent.
  5. Add cooked quinoa, black beans, corn kernels, tomato sauce, cumin, chili powder, salt, and black pepper to the skillet. Stir well.
  6. Cook the mixture for 5 minutes, then remove from heat.
  7. Stuff the bell peppers with the quinoa mixture and place them in a baking dish.
  8. Bake for 30-35 minutes, until the peppers are tender.
  9. Remove from the oven and sprinkle vegan cheese on top.
  10. Return to the oven for 5 minutes, until the cheese is melted.
  11. Garnish with fresh cilantro and drizzle with lime juice.
  12. Let the stuffed peppers rest for 10 minutes before serving.
