Heat olive oil in a large skillet over medium heat. Add onions, carrots, celery, and garlic. Cook until vegetables are softened, about 5 minutes.

Transfer the cooked vegetables to a crock pot. Add mushrooms, barley, vegetable broth, bay leaves, thyme, salt, and black pepper. Stir well.

Cover the crock pot and cook on low heat for 4 hours or until the barley is tender.

Remove bay leaves. Serve the soup hot, garnished with fresh parsley.
