Rinse the mung beans and soak them in water for 2 hours.

In a large pot, add the soaked mung beans, water, chopped onion, minced garlic, grated ginger, turmeric powder, cumin powder, coriander powder, red chili powder, and salt.

Bring the mixture to a boil, then reduce the heat and simmer for 20-25 minutes until the mung beans are tender.

In a separate pan, heat coconut oil and add mustard seeds. Once they start to splutter, add curry leaves and sauté for a minute.

Add diced apple to the pan and cook for 2-3 minutes until slightly softened.

Pour in coconut milk and let it simmer for 5 minutes.

Add the cooked mung beans to the pan and mix well.

Cook for an additional 5 minutes to allow the flavors to meld together.

Stir in lemon juice and fresh cilantro.

Serve hot with rice or naan bread.
