Curried Lentil and Spinach Soup

Rinse the red lentils and set aside.

Heat oil in a large pot and sauté the onion, garlic, and ginger until fragrant.

Add the curry powder, cumin powder, and turmeric powder. Stir well.

Add the red lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

Add the spinach and coconut milk. Cook for an additional 5 minutes.

Stir in lemon juice, salt, and black pepper.

Remove from heat and let the soup rest for 5 minutes.
