  1. Soak the dried shiitake mushrooms in warm water for 30 minutes or until they become soft. Squeeze out the excess water and slice them.
  2. Cut the firm tofu into small cubes.
  3. Heat vegetable oil in a pan and add minced garlic and ginger. Stir-fry until fragrant.
  4. Add the sliced shiitake mushrooms and stir-fry for 2 minutes.
  5. Add soy sauce, dark soy sauce, sugar, and water. Stir well.
  6. Gently place the tofu cubes into the pan and simmer for 10 minutes.
  7. In a small bowl, mix cornstarch and water to make a slurry. Add the slurry to the pan and stir gently.
  8. Cook for another 2 minutes until the sauce thickens.
  9. Garnish with chopped green onions.
  10. Serve hot with steamed rice.
