Multi Grain Pilaf

Rinse the quinoa, bulgur, and brown rice under cold water.

In a large saucepan, heat olive oil over medium heat. Add onion and garlic, and cook until softened.

Add carrot and bell pepper, and cook for another 2 minutes.

Add the rinsed quinoa, bulgur, and brown rice to the saucepan, and stir to combine with the vegetables.

Pour in the vegetable broth and bring to a boil. Reduce heat to low, cover, and simmer for 20 minutes, or until the grains are cooked and the liquid is absorbed.

Stir in the frozen peas, salt, black pepper, parsley, and lemon juice. Cook for another 2 minutes.

Remove from heat and let it rest for 5 minutes.

Fluff the pilaf with a fork before serving.
