  1. In a large skillet, heat sesame oil over medium heat. Add garlic and ginger, and cook for 1 minute.
  2. Add tofu, mushrooms, carrots, cabbage, and green onions. Stir-fry for 5 minutes.
  3. In a small bowl, whisk together soy sauce, hoisin sauce, and cornstarch. Pour the sauce over the vegetables and stir well.
  4. Push the vegetables to one side of the skillet and crack the eggs into the other side. Scramble the eggs until cooked through.
  5. Serve the moo shu vegetables with pancakes and enjoy!
