Chickpeas, also known as garbanzo beans, are a staple ingredient in Middle Eastern cuisine and are packed with protein and fiber.

  1. Drain and rinse the chickpeas.
  2. In a food processor, combine the chickpeas, red onion, garlic cloves, fresh parsley, ground cumin, ground coriander, salt, and black pepper. Pulse until well combined but still slightly chunky.
  3. Transfer the mixture to a bowl and stir in the breadcrumbs. Let it rest for 5 minutes.
  4. Divide the mixture into 4 equal portions and shape each portion into a patty.
  5. Heat olive oil in a pan over medium heat. Cook the patties for 3-4 minutes on each side until golden brown.
  6. Toast the burger buns.
  7. Assemble the burgers by placing a patty on the bottom half of each bun. Top with lettuce, tomato slices, and red onion slices.
