  1. Rinse the rice under cold water until the water runs clear. Drain well.
  2. In a pot, combine the rice, vegetable broth, and salt. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes.
  3. Meanwhile, bring a separate pot of water to a boil. Add the chestnuts and boil for 10 minutes. Drain and let cool.
  4. Peel the chestnuts and roughly chop them.
  5. In a small bowl, mix together the soy sauce and sesame oil.
  6. Once the rice is cooked, remove it from the heat and let it rest for 5 minutes.
  7. Fluff the rice with a fork, then stir in the chopped chestnuts, green onions, and the soy sauce mixture.
  8. Serve hot as a main dish or as a side dish with your favorite Asian-inspired meal.
