In a blender, combine the mango, mixed berries, lemon juice, coconut milk, maple syrup, and vanilla extract. Blend until smooth.

In a small saucepan, sprinkle agar agar powder over 1/4 cup of water and let it sit for 5 minutes. Then, heat the mixture over medium heat, stirring constantly, until the agar agar is completely dissolved.

Add the agar agar mixture to the blender with the fruit mixture and blend again until well combined.

Pour the mixture into serving glasses or bowls and refrigerate for at least 2 hours, or until set.

Garnish with fresh mint leaves before serving.
