  1. Soak hijiki seaweed in water for 10 minutes.
  2. In a large skillet, heat sesame oil over medium heat.
  3. Add ginger, garlic, and green onions, and sauté until fragrant.
  4. Add maitake mushrooms and sauté until golden brown.
  5. Drain the soaked hijiki seaweed and add it to the skillet.
  6. Cook for 2-3 minutes.
  7. In a small bowl, mix soy sauce and mirin.
  8. Pour the sauce into the skillet and stir well.
  9. Cook for another 2-3 minutes.
  10. Sprinkle toasted sesame seeds on top.
  11. Serve hot.
