Preheat the oven to 425°F (220°C).

Wash and dry the potatoes. Cut them into wedges.

In a large bowl, combine the potatoes, olive oil, rosemary, salt, and black pepper. Toss well to coat the potatoes.

Spread the potatoes in a single layer on a baking sheet.

Roast in the preheated oven for about 30 minutes, or until the potatoes are golden brown and crispy.

Remove from the oven and let them rest for 5 minutes.
