Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

In a large bowl, whisk together the whole wheat flour, baking powder, baking soda, cinnamon, and salt.

Add the grated carrots, grated apple, raisins, shredded coconut, and chopped walnuts to the dry ingredients. Stir until well combined.

In a separate bowl, mix together the flaxseed meal, unsweetened applesauce, honey, and vanilla extract.

Pour the wet ingredients into the dry ingredients and stir until just combined.

Divide the batter evenly among the muffin cups.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
