Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.

In a small bowl, mix the ground flaxseed and water. Set aside for 5 minutes to allow it to thicken.

In a large bowl, mash the ripe bananas until smooth. Add the coconut oil, maple syrup, vanilla extract, and the flaxseed mixture. Mix well.

In a separate bowl, whisk together the gluten-free flour blend, baking powder, baking soda, salt, and ground cinnamon.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.

If desired, fold in the chopped walnuts or chocolate chips.

Divide the batter evenly among the muffin cups, filling each about 3/4 full.

Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
