Lentil Tomato Soup
Lentils are a great source of plant-based protein and are commonly used in vegetarian and vegan dishes.

Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic cloves. Cook until onion is translucent.

Add diced carrots and celery stalks. Cook for 5 minutes.

Add cumin, paprika, salt, and black pepper. Stir well.

Add red lentils, canned tomatoes, and vegetable stock. Bring to a boil.

Reduce heat to low and simmer for 20-25 minutes, until lentils are tender.

Remove from heat and let the soup cool slightly.

Use an immersion blender to blend the soup until smooth.

Serve hot, garnished with fresh parsley.
