Butternut squash is a great source of vitamin A and potassium.

  1. Peel and chop the butternut squash, onion, and garlic cloves.
  2. In a large pot, heat olive oil over medium heat.
  3. Add the chopped onion and garlic cloves, and sauté until fragrant.
  4. Add the butternut squash, vegetable broth, coconut milk, curry powder, salt, and black pepper to the pot.
  5. Bring the mixture to a boil, then reduce heat and let it simmer for about 20-25 minutes, or until the squash is tender.
  6. Use an immersion blender or transfer the soup to a blender, and blend until smooth.
  7. Return the soup to the pot and heat it over low heat for a few minutes.
  8. Serve hot and enjoy!
