Rinse the lentils under cold water and set aside.

Peel and chop the carrots, potatoes, onion, and garlic cloves.

In a large pot, heat the olive oil over medium heat.

Add the chopped onion and garlic cloves, and sauté until fragrant.

Add the chopped carrots and potatoes, and cook for a few minutes.

Add the rinsed lentils, vegetable broth, water, ground cumin, ground coriander, salt, and black pepper.

Bring the soup to a boil, then reduce the heat and simmer for about 25 minutes, or until the lentils and vegetables are tender.

Remove the pot from the heat and let the soup rest for 5 minutes.

Stir in the fresh parsley and lemon juice.
