Preheat the oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Place the halves on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for 30-40 minutes or until the flesh is tender.

While the squash is roasting, heat olive oil in a large pot over medium heat. Add the onion and garlic and cook until softened.

Add the carrot, celery, and red bell pepper to the pot and cook for another 5 minutes.

Stir in the diced tomatoes, vegetable broth, kidney beans, cannellini beans, Italian seasoning, red pepper flakes, salt, and black pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes.

Once the spaghetti squash is done, use a fork to scrape the flesh into spaghetti-like strands. Add the spaghetti squash to the pot and stir to combine.

Serve the spicy minestrone with fresh basil leaves and a sprinkle of Parmesan cheese on top. Enjoy!
