Lentil Soup

Lentils are one of the oldest cultivated crops and have been a staple food in many cultures for thousands of years.
This is vegan, gluten free and high protein recipe. Dish can be prepared in 60 minutes. Recipe requires some culinary experience (medium difficulty). Number of ingredients: 15.

Rinse the lentils under cold water and set aside.

In a large pot, heat olive oil over medium heat.

Add the onion, carrot, celery, and garlic. Sauté for 5 minutes until vegetables are softened.

Add the tomato paste, cumin, paprika, salt, and black pepper. Cook for 1 minute.

Add the lentils, vegetable stock, and bay leaf. Bring to a boil.

Reduce heat to low, cover, and simmer for 30 minutes until lentils are tender.

Remove the bay leaf. Stir in lemon juice.

Serve hot, garnished with fresh parsley.
