Cook the Lo Mein noodles according to the package instructions. Drain and set aside.

In a wok or large pan, heat vegetable oil over medium heat. Add minced garlic and ginger, and stir-fry for about 1 minute.

Add the mixed vegetables and stir-fry for another 3-4 minutes, until they are slightly tender.

Add the cooked noodles to the pan, along with soy sauce, sesame oil, salt, and black pepper. Stir-fry for another 2-3 minutes, until everything is well combined.
