Rinse the lentils and set aside.

Heat oil in a large pot and sauté the onions, garlic, and ginger until fragrant.

Add the tomatoes and cook until they soften.

Stir in the curry powder, turmeric powder, cumin powder, coriander powder, and salt.

Add the lentils and coconut milk, and bring to a boil.

Reduce heat and simmer for 20-25 minutes, or until the lentils are cooked through.

Garnish with fresh cilantro and serve hot with rice or naan bread.
