Wash and halve the new potatoes.

In a large bowl, combine olive oil, lemon juice, garlic powder, dried thyme, salt, and black pepper.

Add the potatoes to the bowl and toss until they are well coated with the mixture.

Transfer the potatoes to a baking sheet and spread them out in a single layer.

Roast in the preheated oven for about 40 minutes or until the potatoes are golden brown and crispy.
