Chili con carne, a popular variation of chili, typically includes meat, but this vegetarian version with three types of beans is just as delicious and nutritious!

Heat olive oil in a large pot over medium heat.

Add chopped onion, minced garlic, and diced bell pepper. Cook until softened.

Add chili powder, cumin, paprika, salt, and black pepper. Stir well.

Add kidney beans, black beans, pinto beans, tomato sauce, diced tomatoes, and water.

Bring to a boil, then reduce heat and simmer for 20 minutes.

Let the chili rest for 10 minutes before serving.
