  1. Rinse the basmati rice under cold water until the water runs clear.
  2. In a large saucepan, bring water to a boil. Add the rinsed rice and cook for 10 minutes or until tender. Drain and set aside.
  3. In a small bowl, mix curry powder, lemon juice, and salt. Set aside.
  4. Heat olive oil in a large skillet over medium heat. Add onion, garlic, and ginger. Cook until onion is translucent.
  5. Add carrot and peas to the skillet. Cook for 5 minutes or until vegetables are tender.
  6. Stir in the cooked rice and curry mixture. Cook for an additional 5 minutes, stirring occasionally.
  7. Remove from heat and garnish with chopped cilantro. Serve hot.
