Rinse the quinoa under cold water.

In a medium saucepan, bring the vegetable broth to a boil.

Add the rinsed quinoa and reduce heat to low. Cover and simmer for 15-20 minutes, or until all the liquid is absorbed.

In a small bowl, whisk together the lemon juice, olive oil, minced garlic, chopped cilantro, salt, and black pepper.

Once the quinoa is cooked, remove from heat and let it rest for 5 minutes.

Fluff the quinoa with a fork and then pour the lemon cilantro dressing over it. Mix well.

Serve warm or chilled. Enjoy!
