Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.

Add leftover vegetables, vegetable broth, salt, pepper, paprika, and bay leaf. Bring to a boil.

Reduce heat and simmer for 15 minutes.

Meanwhile, cook noodles according to package instructions. Drain and set aside.

Remove the bay leaf from the stew and stir in cooked noodles.

Let the stew rest for 5 minutes.

Serve hot, garnished with fresh parsley.
