Add leeks, carrots, and mushrooms to the pan and sauté for 5 minutes.

Sprinkle flour over the vegetables and stir well.

Gradually pour in plant-based milk while stirring continuously.

Add nutritional yeast, garlic powder, dried thyme, salt, and black pepper. Stir until well combined.
