  1. Boil the kudzu noodles according to the instructions on the package. Rinse with cold water and set aside.
  2. Heat sesame oil in a large pan over medium heat. Add minced garlic and sliced onion. Stir-fry until fragrant.
  3. Add sliced mushrooms and cook until softened. Then add julienned carrot and sliced bell pepper. Stir-fry for a few minutes.
  4. Add blanched spinach and season with soy sauce, salt, sugar, and black pepper. Mix well.
  5. Add the cooked kudzu noodles and toss everything together. Cook for a few more minutes.
  6. Garnish with chopped spring onion and sesame seeds. Serve hot.
