Cut the cauliflower into thick slices to form medallions.

In a small bowl, mix chia seeds, garlic powder, paprika, salt, and black pepper.

Brush both sides of the cauliflower medallions with olive oil.

Sprinkle the chia seed mixture evenly on both sides of the medallions.

Place the medallions on a baking sheet lined with parchment paper.
