Korean Soba Noodles with Vegetables
Soba noodles are a type of thin Japanese noodle made from buckwheat flour. However, in Korean cuisine, the term ‘soba’ is used to refer to any type of noodle dish.

Cook the soba noodles according to the package instructions. Drain and rinse with cold water.

Heat the sesame oil in a pan over medium heat. Add the garlic and sauté until fragrant.

Add the carrots, bell peppers, zucchini, cabbage, and spring onions to the pan. Stir-fry for 5 minutes or until the vegetables are tender-crisp.

In a small bowl, whisk together the soy sauce, rice vinegar, sesame seeds, red chili flakes, and salt.

Add the cooked soba noodles to the pan and pour the sauce over them. Toss to coat the noodles and vegetables evenly.

Cook for an additional 2-3 minutes, until everything is heated through.

Remove from heat and let it rest for 5 minutes.
