  1. Wash the rice and lentils separately.
  2. Heat ghee in a large pot and add cumin seeds.
  3. Once the cumin seeds start to splutter, add chopped onions, garlic, ginger, and green chili peppers. Saute until the onions turn translucent.
  4. Add turmeric powder, coriander powder, and red chili powder. Mix well.
  5. Add the washed rice and lentils to the pot. Stir to combine.
  6. Add water and salt. Stir again.
  7. Cover the pot and cook on medium heat for about 20-25 minutes or until the rice and lentils are fully cooked and tender.
  8. Let the khichuri rest for 5 minutes before serving.
  9. Garnish with fresh coriander leaves.
  10. Serve hot.
