  4. Add diced potatoes and cauliflower florets. Stir well to coat them with the spices.
  5. Cover the pan and cook on medium heat for about 15 minutes, or until the vegetables are tender.
  6. Add chopped tomatoes and cook for another 5 minutes.
  7. Sprinkle garam masala and salt. Mix well and cook for 2 more minutes.
  8. Garnish with fresh coriander leaves.
