  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with cupcake liners.
  2. In a large bowl, mix together the okara, all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, whisk together the coconut oil, maple syrup, vanilla extract, almond milk, and apple cider vinegar.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the raisins and chopped walnuts.
  5. Divide the batter evenly among the prepared muffin tin, filling each cup about 2/3 full.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  7. Remove from the oven and let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  8. Serve and enjoy!
