Joe’s Corn O’ the Kettle

Preheat the grill to medium-high heat.

Peel back the husks of the corn, leaving them attached at the base. Remove the silk from the corn and fold the husks back into place.

Soak the corn in a large bowl of water for 10 minutes.

In a small bowl, mix together the olive oil, lime juice, chili powder, and salt.

Remove the corn from the water and shake off any excess. Brush the corn with the olive oil mixture.

Place the corn on the grill and cook for 10-15 minutes, turning occasionally, until the corn is tender and lightly charred.

Remove the corn from the grill and let it rest for 5 minutes.

Sprinkle the corn with cilantro before serving.
